5 oz baby arugula
¼ cup shaved Parmesan cheese

1 cup cherry tomatoes, halved (optional)
Dressing
3 tbsp olive oil
2 tbsp fresh lemon juice
1 tsp Dijon mustard
1 tsp honey (or maple syrup)
Salt + pepper
Instructions
Whisk lemon juice, Dijon, and honey. Slowly whisk in olive oil. Season with salt + pepper.
Toss arugula with dressing just before serving.
Sprinkle with Parmesan + nuts. Add tomatoes if using.
🍗 Herb-Roasted Boneless Chicken Thighs with Sweet Potatoes & Carrots
(Serves 4–6)
Ingredients
2 lbs boneless, skinless chicken thighs
2 sweet potatoes, cubed
3 carrots, sliced into sticks
1 onion, cut into wedges
4 garlic cloves, smashed
2 tbsp olive oil
1 tsp smoked paprika
1 tsp Italian seasoning (or thyme + rosemary mix)
Juice & zest of 1 lemon
Salt & pepper
Fresh dill + thyme for garnish
Instructions
Preheat oven to 400°F.
Toss veggies with half the oil, paprika, salt, and pepper. Spread on a sheet pan.
Rub chicken with remaining oil, lemon, seasoning, salt, and pepper. Nestle with veggies + garlic.
Roast 30–35 min, until chicken reaches 165°F and veggies are tender.
Garnish with herbs.
🍓 Frozen Berry Crisp
Ingredients
6 cups frozen mixed berries
¼ cup sugar (or honey)
2 tsp cornstarch
1 tsp lemon juice
Topping
1 ½ cup rolled oats
¾ cup flour
¾ cup brown sugar
½ to ¾ tsp cinnamon (depending on preference... we LOVE cinnamon!)
¼ tsp salt
½ cup cold butter, cubed (or see swaps below)
Instructions
Preheat oven to 375°F.
Toss berries with sugar, cornstarch, and lemon juice. Spread in baking dish.
Mix oats, flour, sugar, cinnamon, and salt. Cut in butter until crumbly.
Sprinkle topping over berries.
Bake 35–40 min until golden + bubbling. Serve warm with ice cream.
No Butter? Try This Instead:
Olive oil (½ cup): Fruity, savory edge, more crumbly topping.
Coconut oil (6 tbsp): Subtle coconut note, buttery-like texture.
Mix half olive + half coconut oil for balance.
🍋 Rosemary Lemon Spritz
Rosemary Simple Syrup
1 cup water
1 cup sugar
3 rosemary sprigs
👉 Simmer until sugar dissolves. Steep 20 min, strain, cool.
Mocktail Version
½ cup lemonade
1 tbsp rosemary syrup
Top with sparkling water
Garnish: rosemary sprig + lemon wheel
Cocktail Version
1 oz gin (or vodka)
½ cup lemonade
